Instructions
to prepare the cookie dough
- combine the dry ingredients into a large bowl
- cream together butter, white and brown sugar, eggs, and vanilla
- slowly incorporate the dry ingredients into the wet ingredients until a dough is formed
- scoop into balls and chill in the refrigerator for at least 2 hours
to create the pecan pie filling
- melt butter on medium, add maple syrup, chopped pecans, and brown sugar
- bring to a bubble, then reduce to a simmer for 2 minutes
- add cream, cinnamon, nutmeg, and salt
- allow to simmer for 2 more minutes, then remove from the heat and allow to cool
baking the cookies
- using the back of a teaspoon or your thumb, create an indentation in the top of each ball of cookie dough
- spoon a bit of the pecan pie filling mixture into the indentation
- bake at 350°F for 10 minutes
- remove from the oven
- finish the cookies with another scoop of the pecan pie filling
- allow to cool completely to let the pie filling set
