Thanksgiving Pecan Pie Cookies

Instructions

to prepare the cookie dough
  1. combine the dry ingredients into a large bowl
  2. cream together butter, white and brown sugar, eggs, and vanilla
  3. slowly incorporate the dry ingredients into the wet ingredients until a dough is formed
  4. scoop into balls and chill in the refrigerator for at least 2 hours
to create the pecan pie filling
  1. melt butter on medium, add maple syrup, chopped pecans, and brown sugar
  2. bring to a bubble, then reduce to a simmer for 2 minutes
  3. add cream, cinnamon, nutmeg, and salt
  4. allow to simmer for 2 more minutes, then remove from the heat and allow to cool
baking the cookies
  1. using the back of a teaspoon or your thumb, create an indentation in the top of each ball of cookie dough
  2. spoon a bit of the pecan pie filling mixture into the indentation
  3. bake at 350°F for 10 minutes
  4. remove from the oven
  5. finish the cookies with another scoop of the pecan pie filling
  6. allow to cool completely to let the pie filling set
